Lemon Drop Jell-O Shots

Slice the lemons in half lengthwise, from stem to end. Carefully scoop out all the pulp from each lemon half. Be gentle to avoid piercing the rind.

Add the unflavored gelatin mixture to the hot lemon Jell-O. Whisk continuously until the gelatin has also completely dissolved and there are no clumps or grains remaining.

Once set, place one lemon half, cut-side down, on a cutting board. Slice each half into 2 or 3 wedges.
