Scoop the lemon sorbet into a small bowl. Add the chilled vodka and half of the chilled prosecco.

Whisk together until smooth and frothy.

Pour the mixture into a chilled flute or coupe glass. Top with the remaining prosecco and garnish with the lemon wedge and a few mint leaves.
