Strawberry Champagne

In a blender or food processor, combine the fresh strawberries, lemon juice, and sugar (if using). Blend until smooth.

Pass the strawberry purée through a fine mesh sieve to remove seeds.

Spoon 1 to 2 tablespoons of strawberry purée into each champagne flute. Slowly pour the chilled champagne into each flute, filling it to the top.

Gently stir to combine, garnish with a fresh strawberry if desired, and serve immediately.
