Place the pitted cherries and simple syrup in a cocktail shaker. Use a muddler to break down the cherries until they release their juice.

Add the bourbon and fill the shaker with ice. Shake well.

Strain the mixture into a rocks glass filled with ice. Top with a splash of club soda, stir gently, and drink immediately. Garnish with a sprig of mint and a cherry.
