Ingredients

  • 4 chunks fresh pineapple
  • 10 fresh mint leaves
  • 1/2 ounce simple syrup
  • 2 ounces white rum
  • 3/4 ounce lime juice
  • Crushed ice
  • 2 ounces club soda to top
  • Pineapple wedge for garnish

Instructions

  • Place the fresh pineapple chunks, mint leaves, and simple syrup into a sturdy highball glass. Gently crush the ingredients using a muddler.
  • Pour in the white rum and the fresh lime juice and fill the glass with crushed ice.
  • Stir well with a barspoon to lift the fruit from the bottom.
  • Top off the glass with club soda and garnish with a fresh pineapple wedge.
