Instructions
Place the fresh pineapple chunks, mint leaves, and simple syrup into a sturdy highball glass. Gently crush the ingredients using a muddler.
Pour in the white rum and the fresh lime juice and fill the glass with crushed ice.
Stir well with a barspoon to lift the fruit from the bottom.
Top off the glass with club soda and garnish with a fresh pineapple wedge.
