My father is crazy for honey. At one point in our childhood, my dad had an entire cupboard dedicated to the ooey-gooey and delicious substance. If we were on a trip somewhere and local honey was being sold, it was coming home with us. We had jars of honey, little cute bears filled with honey, Pooh Bear-looking jars filled with honey. All varying shapes and sizes, and all of slightly different consistency, texture and flavor, depending on how fresh it was and where it came from. A few times, there were chunks of actual honeycomb from the beehive in some of my father’s stash; the stuff he had was so fresh. Good thing honey is legal, because otherwise our house would’ve been raided.

Nobody in my family thought my pop’s honey hobby was weird or unhealthy. We encouraged it, because come on, that syrupy, golden treasure is just too good not to put on everything you possibly can. Food like biscuits, chicken, ham, shrimp, salmon, potato chips, barbecue sauce, mustard… All of these only become more delectable and scrumptious when honey gets involved. From main entrées to desserts, you can have it with just about anything.

But what about a cocktail or two to sip on while the bees buzz around your woolly and floral garden? Well, tonight’s recipe answers that question, and then some. The easy-to-make homemade honey syrup takes almost no time at all to whip up, and if you’ve made Simple Syrup for yourself before, you’ll soon know just how simple this mixture is, too. And once your own honey syrup is chilled and ready to play, you and your friends might only want libations made using it, so make sure you have enough to last you.

Trust me, this is a mixer that disappears quickly. And that’s a compliment.

What are the best ingredients to use to make honey syrup?

This recipe is simplicity itself. All you need to successfully prepare a batch of honey syrup is equal parts filtered water and the honey of your choice. If you’re like my dad and have a dizzying selection of honey to choose from, you can definitely have some fun by making different varieties of this syrup. But also know that your standard store-bought brands you can find at the grocery store work wonderfully too.

  • 1/2 cup honey
  • 1/2 cup water

Instructions

  • Add the honey and water into a small saucepan.

  • Place the saucepan over medium heat. Stir continuously until the honey completely dissolves into the water. It should take about 2 minutes.

  • Remove the saucepan from the heat. Let the syrup cool to room temperature, then transfer it into a clean, airtight container. Store in the refrigerator for up to one month.
