Bask in the warm glow of the setting sun as you sip on the sweet, tart and delicious Rum Sunset cocktail.

It was a wonderful weekend. Everybody was here, too, all together and having fun. The waves were gentle and perfect, the tide never getting too high or low. The grill was sizzling non-stop, supplying every hungry mouth with a steady stream of hot dogs, burgers, corn on the cob and the juiciest ribs you’ve ever eaten, all slathered in the sauces of summertime. Potato salad, salsa and chips, cupcakes, ice cream… You’d think we were celebrating a special occasion. And we were. The here and now is always the best excuse to celebrate being alive.

And what’s a party without a toast or two? Soon, the beach was filled with the clanking of glasses as the cocktail hour rolled around. Cheers and well wishes echoed through the air, as cups filled with a citrusy and sweet tipple were passed around.

All the adults began to sip on a particular spirited libation, the Rum Sunset. Turns out this was a serendipitous beverage to have, with its orange and red layers resembling the sky over all of our heads. The fiery look of the early evening as the sun sank behind the sea was mirrored in each of our cocktails. As we drank, the day came to a glorious end.

Now we have the night to look forward to.

What is the best rum to use in a Rum Sunset Cocktail?

The Rum Sunset is a sweet and rich affair, filled with orange and pineapple juices that lend a tropical, citrus-tinged flavor. You’ll want a rum to match these notes, so we recommend a spiced spirit, one that carries hints of cinnamon, nutmeg and vanilla, and is also of a golden hue. Brands like Captain Morgan, Bacardi, Sailor Jerry and Kōloa all produce fantastic and reliable spiced rums.

Ingredients

  • 1 1/2 ounces spiced rum
  • 3 ounces orange juice
  • 1 ounce pineapple juice
  • 1/2 ounce grenadine
  • Lime slice for garnish

Instructions

  • Fill a highball or collins glass with ice. Add the rum, orange juice, and pineapple juice to the glass. Stir gently to combine.
  • Slowly pour the grenadine down the side of the glass. It’s denser and should sink to the bottom, creating the “sunset” effect. Do not stir after adding the grenadine.
  • Garnish with a lime slice and serve with a straw.

What glassware and garnish are used?

Chill a highball or collins glass, then fill it with ice and mix your cocktail in. Garnish with a lime wedge on top and a straw for sipping. You can also pop in a mini parasol for a tropical vibe.

Shaken or stirred?

It is suggested that you gently stir the ingredients together before adding the grenadine, which adds the sunset effect. Do not shake or stir when everything is combined, as that will ruin the layered presentation.
