What is the best champagne to use in a Strawberry Mimosa?
The “best” of anything can depend on multiple factors, and the high cost of anything is never a good gauge of quality. I do enjoy a fairly pricey (for me) champagne when I can splash out, specifically Taittinger, Veuve Clicquot and Moët et Chandon. But I also enjoy a dry, crisp Coppola Diamond prosecco as well as a brut Mionetto. And both make fantastic Strawberry Mimosas.

Ingredients
- 1/2 cup fresh strawberries hulled
- 2 cups orange juice chilled, divided
- 1 bottle champagne or sparkling wine (750 ml), chilled
- Fresh strawberries for garnish
Instructions
- Place the fresh strawberries and 1 cup of the orange juice in a blender. Blend until smooth. Fine strain into a large cup.

- Pour the remaining 1 cup of orange juice between each champagne flute. Each glass should be around a quarter full.

- Top each slowly with the strawberry mixture, then carefully add chilled champagne or sparkling wine until the glass is full.

- Serve immediately, garnished with a fresh strawberry.
