A refreshing and robust beverage, the Rebujito cocktail is a minty and fizzy sipping experience.

Andalusia has some memorable and beautiful country. Is it one of your favorite places in the world? Wait… you’ve never been to Andalusia? In fact, you’ve never even been to Spain?? Well, I’ll let you in on a little secret. I’ve never had the pleasure of adventuring amongst the picturesque terrain of the Iberian Peninsula either, meaning that I, too, have never been to Andalusia. I have seen Conan The Barbarian multiple times, however, which was filmed there.

Why am I going on and on about Spain? Well, tonight’s cocktail is an Andalusian favorite, it turns out. The Rebujito is a fizzy and invigorating concoction made up of lemon-lime soda with a base of sherry, which also hails from Spain. With sprigs of mint added to the mélange, the resulting beverage is a thirst-quenching and relaxing one, perfect for hot days and nights on the town.

The Seville Fair, which is held in the Los Remedios neighborhood of Seville, Spain, every year after Easter, is an occasion when the Rebujito cocktail is imbibed at great frequency. The local culture is celebrated, while music and dancing fill the streets. All while just about everyone is sipping on a Rebujito. What is the best alcohol to use in a Rebujito cocktail?

The main alcoholic component in today’s recipe is sherry. What is sherry exactly, you may be wondering? The simplest explanation is that sherry is a fortified wine from Spain, produced from specific types of grapes, mainly Palomino, Pedro Ximénez, or Moscatel. Sherries can have a wide range of flavor profiles, including dry and crisp to nutty and toasty. Our recipe recommends that you procure a bottle of fino or Manzanilla to craft your Rebujito with.

Ingredients

  • 6 fresh mint leaves plus a fresh sprig for garnish
  • 2 ounces dry sherry fino or Manzanilla
  • 4 ounces lemon-lime soda
  • Lemon or lime wheel for garnish

Instructions

  • Fill a collins or highball glass with ice cubes and add the fresh mint leaves to infuse the drink.
  • Pour the sherry over the ice. Top with the chilled lemon-lime soda.
  • Stir gently to combine. Garnish with a fresh lemon or lime wheel and a sprig of mint.

Reliable stalwarts that we all grew up with, like Sprite or 7UP, are excellent choices. There’s a new player on the block, too, called Starry, which is also a fine lemon-lime soft drink. I’ll also grab a few bottles of lemon-lime flavored New York Seltzer whenever I see them.
