My assignment wasn’t going well.

In an attempt to run off with the ambassador’s finest and rarest bottle of rum—for research purposes only—I had found myself running across more rooftops than I had initially planned to. Sure, one or two maybe. But all afternoon getting whacked in the face by television aerials and laundry being hung out to dry as I sprinted and leaped from building to building? Exhausting.

I finally reached a street below me that was hosting a lively and crowded market. If I could find an easy way down, I might be able to blend in, disappear and lose the ambassador’s personal guard coming after me, desperate to retrieve that premium hooch. They were still hot on my heels, so I leapt without looking. Right onto a watermelon cart.

My feet burst into two giant-sized examples of the green and refreshing fruit. I tried to continue running, but the watermelons I was suddenly wearing as shoes slowed me down. And the merchant whose wares I ruined was after me now, too. I ducked into the nearest doorway, sliding across the floor and being halted only by a bar. The impact flipped me over, shooting the watermelons off my feet and into a nearby blender.

Applause broke out from the tavern’s patrons as the barkeep turned the blender on, puréeing the fruit into a fine slush. Outside, the ambassador’s guards ran past, not thinking to look in at where I actually was. For the moment, I was safe.

I turned to the barkeep, showing them the bottle of royal rum that caused all this fuss.

“Any ideas?” I asked with a smirk.

What is the best rum to use in a Watermelon Daiquiri?

We really want the flavors of the watermelon to have the spotlight in this drink, while balanced with the bite from a clean and clear rum. So a white variety of the spirit is what we’ll be mixing with. A bottle of Bacardi Silver, Don Q Cristal or—one of my personal favorites—Kōloa Kauaʻi White will mix up wonderfully in this concoction, bringing subtle notes of coconut and other tropical infusions to the party.

Ingredients for Watermelon Daiquiri: watermelon cubes, lime, lime juice, rum, simple syrup, and cocktail tools.

Ingredients

  • 2 cups frozen seedless watermelon cubes
  • 2 ounces light rum
  • 1 ounce freshly squeezed lime juice
  • 1/2 ounce simple syrup
  • Watermelon and lime slice for garnish, optional

Instructions

  • Add the frozen watermelon cubes, light rum, fresh lime juice, and simple syrup into a blender.

  • Blend until smooth, stopping to scrape down the sides as needed.

  • Pour the daiquiri into a chilled cocktail or martini glass. Garnish with a wedge of watermelon or lime if you like, and serve immediately.

What glassware and garnish are used?

You can use a cocktail coupe, a martini glass, or a hurricane glass to enjoy this drink. Garnish with a fresh wedge of watermelon and lime on the rim. You can also pop a mini parasol in if you like.

Can this be prepped as a shaken cocktail?

You’ll need to replace the cubes of watermelon with some fresh juice added to taste, or blend and purée the cubes, then strain the juice into your shaken beverage.
