If your thirst needs quenching, the Pineapple Mojito cocktail is the tangy and sweet refreshment you seek.

I was only an analyst. At least, that’s what I kept trying to convince my superiors. But somehow they themselves or someone else had talked them into believing I was some heroic field agent. A run-and-jump type of character, so to speak. I love my couch, not running and jumping. And somehow I’ve found myself running and jumping. From a pineapple.

It was the oddest sight, and when I close my eyes sometimes, even all these years later, that image explodes out of the darkness. My contact in Vienna had disappeared, and my cryptic assignment wasn’t just mysterious and ambiguous, but now peppered with feelings of dread.

Then a long shadow came into view, emerging from a nearby alleyway. At first, I thought it might’ve been my absent connection finally showing up, ready to impart the info I required. But out stepped a tall, slender figure wearing a trench coat, click-clacking along in shiny wingtips, each step getting louder as they approached me. And they had a colossal pineapple for a head.

No face, no nose… not even holes. Yet all I could hear was steady, weirdly syncopated breathing coming from what I was staring at. Looking down at me from a foot above the top of my head, they spoke. “Feeling tangy?”

I tried to say “not really,” but all that came out was a squeak. I almost sensed a smile on the emotionless and faceless fruity head. They leaned in, getting uncomfortably close. “I said… feeling tangy?”

My legs sprang to life on their own, and before I realized it, I had bolted down the street in the opposite direction, running and jumping all over the Austrian city. I eventually leaped and bounded out of breath back into my hotel, darting straight for the bar. I ordered a Pineapple Mojito, in the hopes that if my new acquaintance followed me here, they’d see me drinking it greedily.

And they’d see me getting tangy in my own time.

What is the best rum to use in a Pineapple Mojito?

If you’re looking for a robust, complex, and rich taste, you can build this drink with a dark or spiced rum, but I find a white variety is the best option. The unaged, clear-colored spirit will meld in harmony with the other ingredients, and it also plays especially well with the pineapple juice. Bacardi Silver and Don Q are both great choices for your Pineapple Mojito.

Ingredients

  • 4 chunks fresh pineapple
  • 10 fresh mint leaves
  • 1/2 ounce simple syrup
  • 2 ounces white rum
  • 3/4 ounce lime juice
  • Crushed ice
  • 2 ounces club soda to top
  • Pineapple wedge for garnish

Instructions

  • Place the fresh pineapple chunks, mint leaves, and simple syrup into a sturdy highball glass. Gently crush the ingredients using a muddler.
  • Pour in the white rum and the fresh lime juice and fill the glass with crushed ice.
  • Stir well with a barspoon to lift the fruit from the bottom.
  • Top off the glass with club soda and garnish with a fresh pineapple wedge.

What glassware and garnish are used?

After you’ve muddled and poured your ingredients into a highball glass, fill it with crushed ice, stir, and top with club soda. Garnish the rim with a fresh pineapple wedge.

What is the best kind of mint to use?

Don’t grab just any mint leaves when you begin prepping tonight’s drink. For any kind of Mojito, fresh spearmint is the best option. There’s also mojito mint, which is milder and a little sweeter, but works just as nicely.

After a long day of running errands, dropping people off and picking them up, going through emails and other work-related stuff, well… It’s enough to make one’s throat a little dry, especially if you’re rushing to get everything done and forget to take a minute or two for yourself.
